Totally Worth Both C's

Gosh: it's hard to believe that just one short week ago our beaches looked like this lovely shot above from Kevin Fleming. The boardwalks are clear again and the threat of ice seems to have passed on until next year. What a winter we have had!


Have you ever heard of bronze extruded pasta? I recall seeing a show that featured it and wondering why I had never heard of it before. Here is the official description:


Bronze extruded pasta, also known as trafilata al bronzo, is a traditional Italian pasta made by pushing the dough through bronze dies rather than modern Teflon molds. Look at how pretty those dies are (below - yeah, I know we're not talking about nice to look at, but I couldn't resist the shiny photo!)


Anyway: this process creates a rough, porous surface that helps sauces cling better, delivering deeper flavor and a more authentic texture.


They are known for their ability to dissipate heat and create friction, which results in a coarser exterior and better grip for the pasta.
